    Easy, enjoyable and VERY HEALTHY meal. Suitable for vegetarians who just replace meat with fried mushrooms

    Orzotto Kcal: 620/portion

    Time spent: [​IMG]
    Difficulty: [​IMG][​IMG][​IMG][​IMG][​IMG]


    Ingredients: (for 4 people)
    - 300g Minced pork
    - 200g Pearl barley
    - 1 medium onion
    - olive oil
    - 150ml of dry white wine
    - 600ml vegetable stock; water, vegetable bouillon cube
    - 1 carrot
    - 100g of spinach
    - salt & pepper
    - Parsley & parmesan cheese on top


    Take a pot add water, bring it to the boil. Add bouillon cube and let it simmer for 5-10 minutes.
    In a small pot add water and in cubes cut carrot. Cook it until its soft (bout 20 minutes usually). When its cooked pour out the water.

    Take a pan and heat up 2 table spoons of olive oil. Add chopped onion and let is simmer until its soft. Bring up the heat, add minced pork and stir until meat darkens.
    Add pearl barley and stir it. While stiring pour white wine and cook for few minutes in wait for alcohol to evaporate. From here on its like risotto. You'r adding stock and you stir. Always add more stock when it evaporates, continue this until you use up all your stock.
    Wash and roughly chop the spinach (not thin! or it 'll disappear inside) and add it for few minutes into orzotto. Mix in carrots, season it to your liking and serve.

    Salmon with Holland sauce & cheery tomatoes Kcal: 520/portion

    Ingredients: (for 2)
    - 2 salmon fillets (bout 200g each)
    - 60g of butter
    - dill
    - 1 lemon
    - 2 egg yolks
    - 2 spoons of white vinegar (used apple vinegar)
    - salt & pepper
    -2 handfuls of tomatoes
    - oregano
    - basil
    - olive oil

    Salmon is done really fast so we 'll start with sauce. Take a pot and a glass bowl. Pour hot water in pot and bring water to the boil. Put bowl over boiling water, and butter and melt it down.
    Separate whites from yolk and put yolk in a bowl (new one), add vinegar and lemon juice and mix it well. When butter is melted down add yolk mixture into and whisk it together. Season it and keep mixing until you get slightly thicker sauce. Done

    Take a pan and add 2 spoons of olive oil. Wash and cut in half cherry tomatoes. Put them on hot oil and season them with salt, pepper, pinch of sugar, oregano and basil. Leave it to cook for bout 1-2 minutes. Put them out.

    For salmon... Wash is then dry it on cloth. Season 1 side with pepper & salt. Put salmon on a hot oil with seasoned side on bottom first. Leave it to cook for 3 minutes then turn. Cook for 2-3 minutes on other side as well. DONE

    Put everything together on a plate, serve it with bread or like i did with a sesame bun.

    Spaghetti milanese Kcal: ~500/portion

    Difficutly: [​IMG][​IMG][​IMG][​IMG][​IMG]

    Ingredients (for 4 people)
    - 350g of spaghetti
    - 200g of smoked bacon (ham also works fine or cooked prosciutto)
    - 400g (or 1 can) of pelati
    - 150ml of dry white wine
    - 1 carrot
    - 1 onion
    - 4 cloves of garlic
    - handful of basil leafs
    - olive oil
    - salt & pepper

    Take a pan and heat up 4 tablespoons of olive oil. Peel both onion and garlic and chop them both.
    Take bacon and cut it into small cubes. Put onion and bacon on oil at same time and start cook until bacon becomes slightly crispy. While bacon is getting done, peel and grind carrot, Add carrot and garlic and mix it with the dish then leave it cook for about 2min and afterwards add wine. Let alcohol evaporate, and don't forget to stir a bit. About 3min later mix in pelati. Bring it to the boil, reduce the heat and let it simmer for 5 minutes. Season to your liking and bring flame back up and thicken the sauce a bit.

    Put pasta in boiling water, add a spoon of oil and season with salt. Leave it to cook until its al dente. Drain out the water and mix sauce with spaghetti.

    Grind some parmesan cheese over it and chopped basil leafs. Server

    Chicken Cordon Bleu with mash potatoes and veggies Kcal: 680/portion

    Ingredients (for 4 people)
    - 4 chicken breasts (bout 200g each)
    - 2 eggs
    - flour
    - bread crumbs
    - salt & pepper
    - 200g of cheese
    - 150g of ham
    - oil (bout 400ml)

    - 5 medium sized potatoes
    - 1 spoon of butter
    - 2 spoons of sour cream
    - pepper

    - 1 carrot
    - 100g of peas

    Preparations:
    - Wash the vegetables and peel potatoes & carrot. Cut carrot into small cubes and potatoes into bite sized cubes.
    - Take your chicken breasts and hammer them down. Don't make them too flat and be careful that chicken won't get torn apart.
    - Grind the cheese
    - take 3 plates, in 1st one add flour, 2nd beaten eggs and in 3rd bread crumbs

    Put carrots and peas in hot water, add salt and cook for about 15 minutes. Take them off the stove and let em rest in water.
    Take a pot and add cold water. Add potatoes and wash them. Drain the water and add fresh cold water. Add salt and start cooking. When potatoes are nicely soft drain the water out and add butter and sour cream. Mash it together.

    Take your breasts :pervert::pervert: and season them on both sides. Place slice of ham onto the breast, then some cheese and another slice of ham. Now roll or just close the breast, whichever you prefer. Now put them through a makeover. 1st in flour then eggs and lastly bread crumbs.
    Let them rest in fridge for about 30 minutes.
    Take a pan and add oil. When oil is hot add steaks in it and fry for about 6-8 minutes on each side.
    Take them out and dry them off on a paper cloth.

    Serve

    I know i promised that i'll be posting sweet recipes during xmas time but I couldn't. I'll post them...no worries... but I'll start new year recipes with Slovenian classic, easy to make and tasty lunch


    Mash potatoes, spinach sauce, sausages and egg on side Kcal: 550/portion

    Ingredients (for 4)
    - 4 pairs of hot-dog sausages
    - 6 medium size potatoes
    - 500g of spinach
    - 4 eggs
    - salt & pepper
    - 1-2 spoon of sour cream
    - 200ml of milk
    - 2 spoons of flour
    - oil
    - nutmeg
    - 2 cloves of garlic

    I always start with potatoes since they take longest time. Wash, peel then cut them. Put them in cold water and wash them a bit. Change water and start cooking. At boiling point reduce heat, cover with lid and let potatoes cook until fork goes trough them nicely. Potatoes can wait in hot / warm water for other dishes to be done or you can make mash asap. Simply season potatoes with salt and pepper, add spoon of sour cream and spoon of butter and mash it. Other option is 2 spoons of butter and milk and mash it. There are ofc more options but this 2 I love the most.
    While potatoes are cooking we continue with spinach. Take a pot and add water. Bring it to the boil.
    Take spinach and wash it then place it into boiling water and cook for few minutes (~3-4min). Pour out water and put spinach into a blender / food processor and blend it. In pot which was cooking spinach add 3 spoons of oil and 2 spoons of flour and whisk. When flour is nicely golden add milk and spinach and continue whisking. Cook for 5 minutes then season. Crush garlic cloves, add some freshly grind nutmeg & pepper, add salt to your taste. Leave it to cook for another 3 minutes.
    Remove spinach from stove and mix in sour cream - done

    For eggs and sausages i don't have to say much. Heat up some oil on pan and add sausages in which there are small cuts. Cook for few minutes and they'r done. For egg... well...simple :)... Take a pan and 2 spoons of oil and heat it up to the max. Add egg and immediately lower the heat to minimum and cover with lid. Let it cook for couple of minutes. Close to the end add a pinch of salt

    Now put everything on plate and serve

    As promised I'm starting with my sweets from Xmas time... I wont be adding Kcal since usually we eat this in holiday times when we sin a bit ^^

    Dark Christmas moon biscuits

    Time spent: depending how fast you are with shaping [​IMG]
    Difficulty: [​IMG][​IMG][​IMG][​IMG][​IMG]

    Ingredients:
    - 80g of cooking chocolate
    - 150g of butter
    - 60g icing sugar
    - orange zest of 1 orange
    - 10g of vanilla sugar OR 1 vanilla stick
    - 3 egg yolks
    - 250g flour

    Break chocolate into small pieces. Take a pot, add water and make water bath. Place a glass bowl over it and melt the chocolate.
    Cut butter in small cubes. Take blender and blend it. Add chocolate and blend it together. While blending gradually add icing sugar. On the end blend orange zest and vanilla sugar.
    Mix in egg yolks with a fork / spoon. After that start blending again and add flour.

    Take a baking plate. Put baking paper on it. Heat up oven to 220°c.

    Now its time to dirty our hands. Form half moon biscuits and place them onto the paper. Remember to spread them around a bit since they'll became slightly bigger then when they were shaped.

    Put them in oven for 10-12 minutes. Do check from time to time you don't want to burn them.

    Take a plate and carefully put biscuits onto it. Spread icing sugar on them for finishing touch.
