    Chicken steaks rolled in Schwarzwald ham and juicy vegetables Kcal: 425/portion

    This was my Christmas dinner and it was gone in minutes :)

    Ingredients: (for 4 people)
    - 4 chicken breasts (~200g/each)
    - 8-12 slices of Schwarzwald ham
    - 1 onion
    - 3 celery twigs
    - 3 carrots
    - 2 courgettes
    - 2 spoons of tomato puree
    - 2 dl of dry white wine
    - water (optional / if needed)
    - olive oil
    - rosemary
    - salt & pepper
    - paprika powder
    - 2 cloves of garlic
    - Orange zest

    Prep:
    - Wash the meat and dry it with a cloth. Hammer it down a bit if needed
    - Wash then cut courgettes, carrots and celery into small strips
    - Peel onion and clove of garlic. Chop in small cubes.
    - mix tomato puree with wine

    Start with carrots. Cook it for 10 minutes then drain the water and let it cool down a bit.

    Take a pan, add oil and heat it up. Take chicken breasts and cook them on each side until they are golden yellow in color and slightly crisp.
    Take them out and season them with rosemary and paprika powder then roll 2-3 slices of ham around them. Use toothpicks to hold ham in place.

    In the same pan add olive oil and heat it up. Add onion and cook until it turns glassy. Add garlic and other vegetables and fry them a bit then cover them with wine.
    Place chicken into the pan, cover it with lid and slowly cook for next 20-30 minutes. Add a bit of water if the dish starts to dry out. In the midway season with tea spoon of paprika powder, salt & pepper.
    5 minutes before the end add zest

    I've never really complimented yourself for this cooking channel of yours, but it's amazing a extremely professional!
    I'm bookmarking this thread, I'll surely come here to look for a recipe when I don't know what to cook! ;)

    Perfect Spanish breakfast
    Pisto on baguette and egg Kcal: 325

    Ingredients (For 1 plate)
    - few slices of baguette
    - 1 egg
    - vegetable oil
    - 1/2 of small courgette
    - 200g of pelati (or 2 medium size tomatoes)
    - 1 onion
    - 2 cloves of garlic
    - 1/2 medium size red paprika
    - 1/2 medium size green/yellow paprika
    - salt & pepper
    - paprika powder
    - table spoon of vinegar
    - olive oil
    - olives

    Start by preparing vegetables. Wash them. Peel the onion and chop it. Cut courgette, paprika into small cubes. If you'll be using tomatoes peel them then cut them into small pieces.
    Take a pan and add 3 spoons of olive oil and heat it up. Add onion until it becomes yellow. Add minced garlic, courgette and paprika, reduce the heat and slowly cook until vegetables are nice and soft. Add pelati or tomatoes and season with paprika powder, salt and pepper.
    Leave it to cook for another 5 minutes (10min if cooking with tomatoes).
    Before the end add vinegar and mix the dish.

    Take a pan and heat up vegetable oil. When break an egg and leave it to coagulate. When it coagulates reduce the heat and cover with lid. Leave it to cook for ~3 more minutes. Before serving season it with pinch of salt.

    Take a plate. Slice baguette into pieces and put them on plate. Take Pisco and put it on baguette and on top place an olive. Add egg and serve.

    Spaghetti alla Puttanesca Kcal:520/portion

    Ingredients: (for 4 people)
    - 350 Spaghetti
    - 400g pelati
    - 3 handfuls of olives
    - 4 spoons of capers
    - 40-50g of anchovies
    - olive oil
    - salt & pepper
    - oregano & basil
    - 1 onion
    - 3 cloves of garlic

    Peel and chop onion, peel and mince garlic, cut olives. Take a pot, add water and bring it to the boil. Add salt and pasta and cook until al'dente.

    While pasta is cooking take a pan. Add olive oil and cook onions until they are nice and glassy. Add garlic, anchovies, capers, olives and pelati. Bring it to the boil, lower the heat and leave it to cook for 5 minutes. Season with pepper to your liking.
    Add a spoon of oregano and basil, mix it all together and done.

    Serve

    Radicchio and pork risotto Kcal: 525/portion

    Ingredients: (for 4 people)
    - 250g of rice
    - 500g of minced pork
    - 1 1/2dl of dry white wine
    - 1 carrot
    - 2 onions
    - 5 cloves of garlic
    - parsley
    - 1 medium sized radicchio
    - 1 spoon of butter
    - 50g of parmesan cheese
    - freshly grind pepper
    - olive oil
    - 2 spoons of corn
    - vegetable stock (bout 600ml, maybe bit more/less depending on rice you'r using)

    Best thing to start with is stock. I usually make few liters of stock and put it in freezer but fast way to do it is boil water and add bouillon cube (1 cube for 750ml). Cook until it dissolves.
    In 2nd pot add water. Peel and cut carrot into smaller cubes. Put it in pot and cook for around 15 minutes, or until its semi-soft.
    Take a pot/pan add olive oil, heat it up and add chopped onions. Slowly cook them until they almost dissolve. Add meat, bring heat up and fastly cook it until meat darkens. Add chopped radicchio, and continue cooking for another 2-3 minutes. Add rice and mix it with radicchio and meat then add 1dl of wine. Let alcohol evaporate.
    Start adding stock. While adding stock mix the dish. Continuing doing so until rice drinks up enough stock that it softens. Add carrots, corn and let it cook for another 5 minutes

    While waiting take small bowl and add bit of pork meat, chopped parsley and a bit of parmesan cheese. Mix it together. Take a pan, add a spoon of olive oil and heat it up. Shape small balls then put them on oil, Once they darken add 1/2 dl of wine. Mix it a bit and put it away from stove.

    Risotto should be done by now. Finish it by adding butter and about 50g of parmesan cheese and mix it with the dish. Season with pepper to your liking.

    Serve

    So every year on 17th of March some celebrate St. Patrick's Day. For past few years i take ingredient and make it in St. Patrick's day theme... Last year i used potatoes with tons of spinach... this year pasta


    St. Patty pasta kcal: 445/portion

    Ingredients (for 4 plates)
    - 350g pasta (i used spinach and ricotta tortellini)
    - 100g already cleaned asparagus (wild ones - thin)
    - 400g of broccoli
    - 2 spoons of capers
    - ~10 green olives
    - olive oil
    - 2 cloves of garlic
    - 1/2 or 1/4 of chili (depends on how hot you want your dish)
    - 4 ladles of stock (chicken or veggi)
    - freshly grind pepper (NO SALT...ingredients are salty enough)
    - 50g of parmesan cheese

    Note: Asparagus is better if its wild, its more expensive but better in both taste and nutritious. Use only top parts that break, don't use bandy parts.

    Lets start with stock. If you don't have time to make few liters of stock and stocked them then take a pot add 1/4 of a liter of hot water and place it on a stove. Add 1/4 of bouillon cube. Bring it to the boil and add asparagus. Reduce the heat and cover with lit... let asparagus cook until it softens. When they're done remove them.

    Wash all veggies. Slice garlic and chili, cut olives in half, cut broccoli .
    Take a pot or bigger pan (wok). Add 4 spoons of olive oil, chili, garlic and capers. Mix a bit and add olives. Let it cook for 2 minutes while you mix from time to time. Add broccoli and stock. Cover with lid and let it cook for ~8 minutes...add a ladle of stock more if needed.
    While veggies are cooking prepare pasta. Take a pot, add water, pinch of salt and bring it to the boil. Cook pasta until al'dente, time is written on box ( if you made fresh pasta like me it'll take minute - two... 'll post recipe for fresh pasta next time)
    Drain pasta and put them with veggies. Mix the dish and add asparagus. Let it cook for a minute so asparagus get warm again. Season the dish with pepper and parmesan and mix.

    Serve on plate, sprinkle some olive oil and grind some parmesan.

    Been asked many times to make food for VEGANS
    Popular Egyptian style dish, commonly sold as street food in Europe and elsewhere.

    Falafel Kcal: ~375/portion

    Ingredients (for 4 people)
    - 250g chickpeas
    - salt
    - 1 spoon of baking powder
    - 3 spoons of chopped parsley
    - 1 or 1 1/2 table spoons of cumin seeds
    - 1 spoon of freshly grind coriander seeds
    - 5 cloves of garlic
    - black pepper
    - 1 lemon & 1/2 of its zest
    - vegetable oil

    Ofc 1st comes preparation and in this case its chickpeas. Soak them in cold water during the night - 12h (preferably longer 12-24h).
    Once they're done soaking pour water out and dry them out in a cloth.
    Peel garlic and mince it.

    Take food processor and put chickpeas in. Add 1/2 of lemon juice and zest. Start processing it while adding cumin seeds, coriander, parsley and garlic.
    We are processing until mass is finely chopped but not completely smooth. Put mass into bowl and season with salt and pepper and 2nd half of lemon. Finally mix in baking powder.
    Cover with cloth and let it rest for 45-60 minutes.

    Take the mass, pour some cold water on your hands and start shaping mass into balls.

    Take a pan. Add oil - about 1.5-2cm should be enough. Heat it up. Place balls into the oil and let them fry 4-6 minutes while turning them so they get nice and golden-brown all over. Its also important to place around the pan and not to each other so they don't stick to each other.

    Serve with veggies such as tomatoes, green salad, cabbage, onions,...hummus, pita bread.

    vegan balls :) They are tasty tho... i was shocked when i made them... basically i was left with chickpeas after using them in a stew so i came up with this one... I changed amount of spices a lot from typical recipes but i found taste better. Maybe next one 'll be better for you


    This one is out of the season atm but i'm guessing people might make it in autumn.

    Pork steaks in hunter's sauce with blueberry mash potato Kcal: ~675/portion

    Ingredients (for 4 people):
    - 4 pork steaks (150-200g each)
    - 5-7 medium potatoes
    - 75g blueberries
    - spoon of butter
    - 0.5 dl of milk
    - salt
    - olive oil
    - 2 red onions
    - 4 cloves of garlic
    - 2 carrots
    - 100g of fresh peas
    - 2 dl of red wine (used Merlot wine)
    - thyme
    - savory
    - 1 spoon of dried black trumpets
    - 2-3 dl of vegetable stock
    - spoon of tomato puree
    - spoon of chopped parsley or chives
    - 1/2 lemon


    Lets start with potatoes since its easier to do. Preferable use fresh and not frozen blueberries.
    Wash then peel potatoes. Cut em into small cubes and was them in cold water. Pour cold water into a pot, add potatoes, pinch of salt and start cooking. Once they are nice and soft, pour water out, add spoon of butter, milk and blueberries and mash them.

    Prepare steaks. Wash them under cold water then dry them with a cloth. Don't cut away any fat... those are juices! Season both sides of steaks with salt and pepper. Peel and chop onion & garlic.
    Take a bigger pan and add olive oil. Add onion and garlic and let then slowly cook for 10 minutes. Add steaks, increase the heat and fast cook them on each side so steaks darken (bout 2-3min on each side). Add wine and cook for 2-3 minutes. Reduce the heat and season with savory, thyme and black trumpet.
    Peel then cut carrots, wash peas and add both veggies into pan with steaks. Continue cooking for another 45 minutes or until steaks become soft, while adding stock (1 ladle every 10 minutes)

    Once steaks are complete, remove them and continue with sauce. Crush carrots and peas with spoon/masher or whichever tool you have at your disposal. Take a small bowl and mix tomato puree with a bit of stock and mix it together. Add tomato into pan. Take parsley, wash it and finely chop it, then add it to the mix. Bring sauce to boiling point, add lemon juice and let it simmer for 3 minutes. Place steaks back in and warm them up.

    Serve and use few blueberries for decoration

    Sorry guys i am extremely busy lately, hardly find time for forum, but I do, so after some break here's another recipe...

    Spring recipe, that's healthy, easy to make, tasty and fast!

    Chicken breasts with spring vegetables in bear sauce Kcal: 425/plate

    Ingredients (for 4 plates):
    - 4 chicken breasts, skinned, ~200-250g /each
    - 500g of asparagus
    - 250g cherry tomatoes
    - 100g peas (fresh, not canned)
    - 250-300ml of light beer
    - 4 table spoons of butter
    - olive oil
    - salt & pepper
    - oregano

    Wash the veggies, cut bottom, hard part of asparagus away, cut tomatoes in half.
    Take chicken and hammer it down a bit. Season it with salt, pepper and oregano.

    I did this for each person individually...so repeat the process...

    Take a pan, add table spoon of olive oil and heat it up. Once pan is hot add chicken and cook until brownish crust starts to appear (few minutes on high heat). Turn chicken over, add asparagus & peas and darken chicken again. 1 minute after chicken got turned add 1 table spoon of butter, cherry tomatoes and move ingredients around a bit so that butter gets on them . Careful, turn asparagus often since otherwise they'll get burned.

    About 1 minute after there's no more butter in the pan add 75ml of beer, cook for another minute while mixing ingredients around.
    Turn off the stove and place on plate

    Salty pancakes with béchamel, chicken and veggi filling Kcal: 690/plate

    Ingredients for about 4 people

    Pancakes:
    - 350ml of milk
    - 240g of flour
    - 2 eggs
    - pinch of salt
    - 0.5-1dl of mineral water
    - oil

    Bechamel sauce:
    - 40g of flour
    - 40g pf butter
    - 80g of parmesan cheese
    - nutmeg
    - 300ml of milk

    Filling:
    - 450g of chicken breasts
    - 1 lemon
    - pinch of sugar
    - 1 big grated carrot
    - 2 onions
    - 1 garlic
    - 80g of canned corn
    - 1 courgette
    - salt&pepper
    - oregano
    - paprika powder
    - olive oil
    - parmesan cheese

    Firstly make pancakes. Take a bowl, break eggs in it and mix them. Gradually add milk and flour. Season with salt and on the end mix in mineral water.
    Heat up the pan, add a bit of oil and spread it around. Take a ladle of mixture and start making pancakes.

    Filling...
    Take chicken, remove fatty white parts and cut it into small cubes. Take a bowl put cubes in and marinade them with lemon juice & zest, paprika powder, oregano, salt & pepper. Let it rest for 10-20min

    Take carrot, peel it then grate it. Wash courgette and slice it into small cubes. Peel onion&garlic and chop them.
    Take a pan, add olive oil and start cooking veggies. I cooked them separately and placed them into closed bowl afterwards. Firstly cook carrot for about 2 minutes while mixing.
    onion and garlic will take you about 5 minutes and also add sugar to onion. Courgettes should be seasoned with salt and pepper then cooked for about 5 minutes
    Finally take your chicken and cook it for about 5-8 minutes
    Mix everything and add corn

    Lastly make bechamel.
    Take a pot. Add and melt butter, once its melted gradually add flour until you get a nice paste. Now while whisking/mixing gradually add milk and mix until its nice and creamy. Once its there season with nutmeg and add parmesan.

    Time to assemble the pancakes... take a pancake, spread about 3-5 spoons of bechamel on each. 3-5 spoons of filling, add a bit of grated parmesan and roll together.

    Note: In case pancakes become cold, heat em up so they are nice and warm for assembly . I cooked veggies separately simply so that each 'd get maximum flavor from seasonings

    Serve

    Hello long time since I posted. So I thought that now after @Owl removed ~100 rep and 300 likes from this thread... THANK YOU MR. ADMIN. I should revive it. Well I have to revive it regardlessly. I've noticed a lot of mistakes in some texts and some recipes got improved/changed.

    So this thread is alive again. Happy reading.

    1st. dish 'll be for those none carb guys :)

    Minced meat with veggies
    Kcal: ~490/plate

    Ingredients for 2
    - 3 medium size carrots
    - 200g of fresh green peas
    - 2 red onions
    - 200g canned green beans
    - 500g of mix minced meat
    - 1 red / green paprika
    - olive oil
    - salt & pepper
    - 3 spoons of tomato puree


    Peel onions and chop them into half moons. Wash then peel carrots and cut them into strips.
    Take a pot. Add boiling water / bring water to boil, add salt, carrots and peas and cook for 5 minutes (softening veggies)

    Take a pan and add of olive oil. Add onions, season with salt, cover with lid and let it cook for 10 minutes on low heat (softening onions). Increase heat, add paprika, peas and carrots. Continue cooking for about 5 minutes while mixing - you don't want to burn anything.
    Add minced meat, season with salt, pepper and if you love it add oregano or thyme. Minced meat has to be mixed so that it cooks nicely all around.
    Mix tomato pure with 1dl of hot water then add it into the dish. Lastly add green beans and continue cooking until beans are nice and warm.

    Serve on plate and eat.
